This project was no doubt one of the easiest and most delicious things I have ever put together! And it’s easy for kids to help out!
Start with a pre-made graham cracker pie crust.
To make the filling:
Whip together (I used a mixer)
(1.5) 8oz packages of cream cheese (12oz total)
(1) cup sugar
Mix until creamy
(1) Pint of heavy whipping cream
Mix all together until stiff peaks form.
This is now your cheesecake filling. Separate into as many bowls as you would like for colors. We used a GEL based food coloring, as not to liquify the whipped cream cheese filling.
Once you have all the bowls of colors, you begin the process of filling in the pie crust. Just plop different colors around until you’ve used them all up.
After the colors of whipped cream cheese are in the graham cracker pie crust, simply swirl slightly with a knife or spoon until the colors are only slightly mixed.
Too much mixing of the colors will result in a brownish blob of cream cheese!
Smooth out the top, and add whatever variety of sprinkles makes you happy! Place in fridge for at least 30 min to set back up, and ENJOY!
