Lemon Strawberry Breeze Cake! The Beautiful Taste of Summer!

This cake is full of flavor, incredible pockets of lemon burst, and just the right amount of sweet!

Here’s what you’ll need to get started:

1 box lemon cake mix (+ any ingredients listed on box)

(1) 14 oz can sweetened condensed milk

(1) 16 oz container lemon frosting

(1) 21 oz can of strawberry pie filling

(1) 8 oz container of whipped topping

1 1/2 – 2 cups of diced fresh strawberries

First, prepare the cake in a greased 9×13 pan, as directed on box.

Next, you’re going to let the cake cool for about 10 minutes, then poke all sorts of large holes across the cake. The end of a wooden spoon, or really anything rounded will work.

Next, with the cake still warm, pour the sweetened condensed milk across the cake, letting it soak into the holes.

I used a spreading spatula knife to aid in this process. Next, open your container of lemon frosting, remove the foil cover, and then heat in the microwave for 30 seconds to soften and warm. Pour most of this container out over your cake and really spread the warm frosting down into the holes. These lemon pockets will taste incredible later.

Next, let this cake cool for another 30 minutes on the counter, then place it into the refrigerator to set and completely cool for about another hour.

Now you can prepare your topping! Start by removing the whipped topping from the freezer, and letting it thaw a bit on the counter while you prep the strawberries and pie filling.

Chop your strawberries into bite-size pieces until you have at least 1 1/2 cups. Set aside for later.

Next, place the can of strawberry pie filling into a medium bowl, and use a fork to smash the whole strawberries into a more jam-like spread. This smashing process will take a little while, and is also a great step for a kid-helper!

Next add thawed whipped topping to your pie filling and mix together as shown.

Now remove your cake from the fridge, and spread whipped strawberry mixture onto your cake.

Finally, top with fresh strawberries!

I can honestly say, I’ve never loved a dessert as much as I love this cake! The lemon bursts, and the strawberries blend so well, and the cake is moist and delicious!
